Another diamond to be unearthed among the cobbled streets of Ibiza town, Bar 1805 is the brainchild of charismatic Frenchman and mixologist, Charles Vexenat, who named the venue after Henri-Louis Pernod, the first man to launch an absinthe brand. So yes, you’ll find the fabled green fairy in abundance at this quirky cave – though after a session here, the same probably won’t be said about your senses. Inside, the walls are adorned with vintage cocktail shakers and glassware, while the outside terrace is always full of people tucking into moules frites (the house speciality) under the moonlight. There are usually special deals allowing you to pair the dish with a cocktail for less than 20EUR and, let’s be honest, that’s a small price to pay to line your stomach.
Café Montesol
Opened in 1933, Hotel Montesol is Ibiza’s oldest hotel. Back then it was a meeting point for bohemian free spirits who’d spend hours discussing their tortured artistic minds, and while you’re less likely to pick up on similar conversations these days, Café Montesol is still a hub for creatives. With a corner spot on Vara de Rey, gorgeous, celestial-inspired interiors and an innovative cocktail menu that also serves up an array of scintillating classics (you can’t go wrong with a Tom Collins), it’s very much at the epicentre of the bar scene in Ibiza Town. Head up to the roof for some of the best Dalt Vila views around.
Kumharas

A west coast wonder that slips under the radar, Kumharas is one of the least pretentious places to watch the sun go down. Located in San Antonio Bay, with a setting almost directly on the water, it boasts uninterrupted views of the day’s climax, but despite the big crowds, manages to maintain a level of chilled-out hippie reserve that’s the antithesis to some of San Antonio’s more well-known sunset spots. Arrive early and browse the on-site market stalls, then order a mojito and settle in for the ride. There’s often live music here, too.
