Zuma St Barths will operate seasonally through April 2027, open seven days a week from 6 pm to 1 am — hours built for the St Barths rhythm of a long, late dinner that turns into something else entirely. The setting pairs an intimate indoor dining room with a semi-outdoor space offering high-top seating along the waterfront, with Gustavia’s harbor as the backdrop. The explicit intention is sunset drinks through dinner and into late-night celebrations, and the layout supports all three without awkward gear shifts.

The culinary program runs through Zuma’s three distinct kitchens: the main kitchen, a sushi counter, and a robata grill, each working in the contemporary Japanese izakaya tradition of dishes built for sharing and a drinks list — spanning signature cocktails, fine wines, and premium sake — that keeps pace. As the evening progresses, the energy shifts toward the bar and a resident DJ, with a high-top counter surrounding the DJ creating a natural gathering point as dinner gives way to the night.
